Best Cashew Nut Cookies Recipe for Chinese New Year

Here is a well loved cashew nut cookies recipe. Once you have tasted one, you cannot resist having more! It is so sinfully delicious ! Great for any festive celebrations.

A friend made the cashew nut cookies with the given recipe for us and we loved it so much that we asked for the recipe. We have never tasted another cashew nut cookies recipe as good as this. The savoury cookies melt in your mouth, and ends with crunchy cashew nut bite. Utterly delicious!


Ingredients


120g butter

120g vegetable shortening

½ cup sugar

½ tsp vanilla essense

Pinch of salt

1 cup grounded cashew nuts

1¼ cup self raising flour

1 cup plain flour

Red cherries/cashew nuts for topping



Method

1. Cream butter, vegetable shortening and sugar in the mixer till smooth.

2. Add in vanilla essence and salt.

3. Stir in grounded cashew nuts and both types of flour. Mix well.

4. Divide and shape mixture into small balls. I like to use the ½ tbsp measuring spoon to press it into round shape. Alternatively, you can make it into heart shape, cresent shape and so on.

5. Press a cut cherries or cashew nut at the top.

6. Arrange them neatly on a baking tray. (Note: They do not expand)

7. Bake at 280°F for 15 - 20 minutes (until golden brown).

And ta-da.... the cookies are ready !

Thanks for the recipe, but what I found the most interesting was the video using fabric to wrap gifts--eliminating the need to use paper!

I love homemade cookies. They always have a different feel to it as compared to those commercially produced cookies.

During Chinese New Year, this cashew nut cookie is one of my favourite. Thanks for sharing this wonderful recipe, now I don't have to wait till Chinese New Year to enjoy them. Just have to convince someone...

I try your recipe but I changed something becoz I don't have self-raising flour and not add more salt.(My cashew is salty)

I brush egg yolk wash on top before backing.

I used 300'F and 16mins

come out great! Thank you

thanks so much for your feedback, cookie. I think brushing the egg yolk on the top before baking is good idea to give the cookie a nice yellow colour.
